Aging
Pét-nat wine (short for pétillant naturel, which translates from French as “natural sparkling”) is produced using the ancestral method, which involves one fermentation that begins in the container, and when there is a small content of residual sugars in the future wine, it is bottled, where it undergoes secondary fermentation, which creates natural bubbles of carbon dioxide. The sparkling texture of the wine adds a special charm and lightness to it.
